Scott,

The minimum items required to run two trains simultaneously would be a 
transformer with constant voltage and another engine.  The trains would be 
short (3 and 4 freight cars each) but you would have two trains running.

I would also recommend:
   another small transformer and engine as back-ups
   a couple of more freight cars or passenger cars
   3 or 4 more inexpensive action accessories
   an extension cord.

None of these items need to be in great shape, just as long as they are 
working.  I think most of these items can be purchased for little money, 
donated to the club, or found 'in the boxes that are under the tables' at 
the train shows.
